What’s Woodae Galbi?

Woodae galbi (우대갈비) is a term used to describe bone-in meat that is cut lengthwise from the 6th to 8th ribs. This particular cut is known for its excellent texture and tenderness, as these ribs, namely the 6th, 7th, and 8th ones, are considered to be the most tender among all the ribs.

Out of the 13 ribs, the most tender and delicious ribs are the prime ribs, which are made using the 6th, 7th, and 8th flower ribs. If the LA ribs are horizontally shaped, the preferred ribs are vertically shaped so that you can enjoy the whole ribs.
